Cibolo Moon features the only bar in Texas that is “T” certified by the Tequila Regulatory Commission, a designation awarded to establishments that showcase and educate about tequila. The staff has gone through training, tasting and testing to achieve the certification.

Tequila Bar

Many people know little about tequila production, such as where the juice comes from and how it is extracted, fermented and bottled. Our staff enjoys changing customers' perceptions or helping them appreciate tequila.

 

It starts with the basics: Tequila is made from the juice of the blue agave; it has to be from the tequila designated origin, or DO, which includes areas in five states in Mexico, although 95 percent of tequilas come from Jalisco; and 51 percent of the liquor must come from blue agave. The best tequilas are 100 percent agave, which is stated on the bottles. Anything less means there are fillers.

 

After the blue agave is harvested and its leaves are cut off, the piña is roasted for approximately 24 hours. Then, the juice is pressed out and it's either bottled immediately for blanco, fermented and aged in barrels for two to 12 months for reposado, or fermented and aged for one year or longer for añejo.

 

Cibolo Moon features over 75 tequila varieties behind the bar and showcases 5 different tequila infusions to create many different cocktails with the Strawberry Jalapeño being a must try for anyone who visits San Antonio.

 

The Strawberry Jalapeño Margarita begins with our house tequila and fresh cut strawberries and jalapeño s that will infuse for 72 hours with the jars being on display for the patrons to see the process. After it is has matured through the infusion process house made agave syrup, freshly squeezed lime juice are added and topped off with a strawberry wedges and jalapeno wheel. It's a refreshing cocktail that starts with a sweet strawberry flavor and finishes with that jalapeño sensation at the end.

 

The menu also includes many allocated and hard to find specialty tequilas like the Patron family: Piedra & Burdeos along with the Tears of Llorona. If you are new to the tequila scene ask the knowledgeable staff about one of the many great tequila flights to sample a few of the offerings.

Directions & Parking

Self-parking is complimentary. Valet parking can be validated at the restaurant.  Cibolo Moon is located inside the main resort.  From the main entrance continue inside the lobby and down the staircase to the left.

 

From Downtown San Antonio:

  • Take 281 North to TPC Parkway
  • Turn right on TPC Parkway
  • Continue about 3 miles until you enter the neighborhood of Cibolo Canyons
  • Turn left into the resort
  • At the stop sign, continue straight
  • Make your first right into the clubhouse parking lot

 

From the Hill Country:

  • Take 281 South to TPC Parkway
  • Turn left on TPC Parkway
  • Continue about 3 miles until you enter the neighborhood of Cibolo Canyons
  • Turn left into the resort
  • At the stop sign, continue straight
  •  Make your first right into the clubhouse parking lot
