Executive Chef - Brett Austin Gardiner
Brett Austin Gardiner, former executive chef and co-owner of the award-winning Restaurant Hapa in Oldsmar, joined the culinary team at Tampa’s critically acclaimed Pelagia Trattoria as sous chef in December 2011.
Gardiner, who opened Restaurant Hapa in 2005, closed that successful fine dining venture to oversee a larger staff and continue an on-going culinary collaboration with former co-worker, Pelagia Executive Chef Andrew Basch.
This reunited culinary “dream team” first worked together while at Oystercatchers at the Grand Hyatt Tampa Bay, where Gardiner was lead cook and sous chef. Gardiner left Oystercatchers to open Restaurant Hapa and was joined at his new restaurant in 2005.
