Executive Chef Mark Heimann forges unforgettable dining experiences with a sense of style and individuality that has become a Vinoy trademark at our restaurant in St. Pete, FL.

Graduating from the Kendall Culinary School in Chicago, Chef Heimann held several culinary positions throughout the Chicago area before joining us in St. Petersburg, FL in May 1995.  Chef Heimann also helped author the resort's first cookbook, Taste the Vinoy – Without Reservations, which launched in New York City at the James Beard House in 2004.

The “Grand Lady of the Bay” is home to Marchand’s Bar & Grill, a swank eatery that keeps vigil over the downtown marina. Remodeling efforts emulate the Mediterranean decor present throughout the Renaissance Vinoy Resort while utilizing rich woods and marbles. Keeping up with changes in guest expectations and healthier lifestyles, the menu also reflects a brand new era -- gone are the tired sauces and a heavier fare of yesteryear. In their place, the menu reflects the flavors of the Mediterranean with touches of other global influences, such as a macadamia-encrusted fish might be served with a papaya or mango salsa, while the lamb is redolent of the most virgin olive oil with touches of fresh rosemary. Restaurant History - Pompeian Dining Room

Situated on the slopes of Vesuvius, Pompeii is the famous site of the 79 A.D. volcano eruption; the ancient Italian city was buried in all of its splendor.

Archeological research and excavation first began at the site in the 18th century and continues today. A flurry of new discoveries in the 1920’s coincided with the opening of the Vinoy Park Hotel in St. Petersburg in1925.

Charged by Aymer Vinoy Laughner to design this grand building, eminent architect Henry L. Taylor quickly embraced the thrilling findings at Pompeii. The vibrant “Pompeian” colors of red, blue, black and yellow, plus the fanciful and mythological decorative motifs were lavishly applied in the elegant dining room overlooking the bay.

The renovation of the Vinoy in the 1990s included a meticulous, although only partial, restoration of the original murals in the Vinoy’s historic dining room, Marchand’s Bar & Grill. In 2012, a further restoration of these extraordinary paintings occurred, complementing the overall beauty of the room.

Paul's Landing

The Vinoy Renaissance Resort & Golf Club is staying true to its historic roots, celebrating all things hops with the recent debut of their own craft brew, Paul's Landing. The Vinoy invites guests to discover the refreshing and indigenous citrus wheat flavors while sipping on St. Petersburg history.


The Vinoy proudly stands on what began as an orange grove. William Paul not only helped pioneer this location, but also planted the first orange seedlings in 1854. Much like Paul, The Vinoy worked to create something new, and the history of the resort seemed like the perfect inspiration to get started.
