Our Culinary Team

The culinary team at our Orlando wedding hotel is dedicated to providing the highest possible quality products with a focus and emphasis on local farms and sustainable seafood whenever available. We are proud to offer micro local highlights from responsible growers and producers in the industry.

John Janucik - Executive Chef

Chef Janucik has been in the culinary field for 15 years. He is a graduate of the prestigious Culinary Institute of America in Hyde Park, New York and continuing education at the Culinary Institute of America in Napa Valley, California. His culinary creations are described as sophisticated and savory delights with modern finesse.


It is with great pleasure that we announce our very own Chef John Janucik as the 2014 recipient of the Award of Culinary Excellence for Renaissance Americas.

The Award of Culinary Excellence was established in 1998 to identify and celebrate our impressive Culinary Talent for the Americas throughout the Full Service portfolio. Nominations were submitted by hotels and reviewed by the CLS (Continental Lodging Services Team).


One chef per brand was selected (Renaissance, JW, Ritz and Marriott) based on Guest Satisfaction/Engagement Scores, F&B Profit, Community Engagement, Sustainability Efforts, and leadership on property.

Michael Dunton – Executive Sous Chef

Chef Michael Dunton's career began in high school, where he took a culinary program and also worked as a prep cook/dishwasher in his spare time. He owes the development of his rustic style of cooking to his roots growing up in Cape Cod. Michael graduated from the prestigious culinary program at Johnson and Wales and learned classic French and European cooking techniques during an externship under a certified master chef. His Marriott career began 11 years ago in Massachusetts and his creative culinary spirit with a New England flair is a welcome addition to Renaissance's culinary tea

Jeremy Blythe – Pastry Chef

Jeremy Blythe has been in the Culinary Industry for the past seven years in various high - end hotels and resorts. As a rising young star in the Orlando pastry community, Jeremy's career began at an upscale Florida hotel where he worked for a classically trained pastry chef from the Culinary Institute of America. In this role, he learned many techniques from across the world and his love of the delicate and masterful art of pastry took off. Jeremy is passionate about all pastries from around the world and loves to learn new and emerging techniques as they develop. He is very excited to share his finely honed craft with hotel and restaurant guests w ho delight in desserts as much as he does
