The traditional gastronomy of Madrid is included within Spanish cuisine in general, and in particular Castilian gastronomy. Some of the most characteristic preparations are the cocido madrileño, Madrid-style tripe (callos a la madrileña), garlic soup, and desserts such as rosquillas tontas y listas, huesos de santo, the churros (prepared in the churrerías), the bocadillos de calamares, the patatas bravas, the chopitos, etc. The bars and restaurants give off this smell through the streets at almost any time of the day.
