Santo Mauro, a Luxury Collection Hotel, Madrid

Dining

The traditional gastronomy of Madrid is included within Spanish cuisine in general, and in particular Castilian gastronomy. Some of the most characteristic preparations are the cocido madrileño, Madrid-style tripe (callos a la madrileña), garlic soup, and desserts such as rosquillas tontas y listas, huesos de santo, the churros (prepared in the churrerías), the bocadillos de calamares, the patatas bravas, the chopitos, etc. The bars and restaurants give off this smell through the streets at almost any time of the day. According to some authors, Madrid is cuisine that is the result of the rush of bars and diners, of dishes prepared quickly and showing flavors to be accompanied with wines from the region. Many of the dishes that have the denomination "a la madrileña" originate in the bars and taverns of Madrid. Today it is not uncommon to see how foods from other cultures are installed in numerous streets, making the offer richer and opening the doors to fusion cuisine.
