Chef Prasad and his team insist on using the best ingredients for their Italian food creations at Fratelli Fresh in Mumbai. So much so, that they’ve planted their very own garden next to the restaurant, where they grow tomatoes, rosemary and fragrant basil. Throughout the day, you can see sous chefs bringing handfuls of herbs to the kitchen to be used in mouthwatering insalata caprese and rich minestrone alla genovese.
“The keynote of this restaurant is simplicity”, says Prasad. “We make straightforward, delicious food. Other restaurants in Mumbai don’t stick to being just Italian, they mix in French and other European styles, but we have stayed with food like an Italian grandmother would cook.” It’s an approach that has recently won Fratelli Fresh a commendation from the Indo-Italian Chamber of Commerce for being one of the most authentic Italian restaurants in the country.
