About the Chef Manuel Menchaca

Manuel Menchaca's cooking background is full of feelings, experiences, and traditions. His inspiration in traveling has made him a multicultural person in different levels, from the balance of his techniques to the sense of belonging in everything he does. This is how he has adopted the local flavors of every city in which he has lived.

His main inspiration comes from the emotions that the food he prepares creates in the people; therefore, La Cazuela is one of the Chilean specialties that he enjoys the most, due to the human and family touch that surround this recipe.

Manuel was born in Mexico and has lived in many cities, like Montecarlo and La Haya; places that have enriched his inspiration for the kitchen. Also inspired by el Norte Grande de Chile, Manuel takes the characteristics of the Andean Plateau and the Aymara culture into his creations, the same as the sea and local products.

Today, Manuel is the Executive Chef of the Renaissance Santiago Hotel, making him a food experiences creator to be uncovered when visiting Catae Restaurant
