1860 Tradición offers traditional, seasonal cuisine in an avant-garde, yet casual atmosphere—serving delicious, healthy recipes prepared with seasonal produce complemented by superb wines. From its sun-drenched terrace, 1860 Tradición offers stunning views of the village of Elciego with the Cantabria mountain range as a backdrop, all right under Frank Gehry’s unmistakable canopies.

Under the consultancy of Francis Paniego, traditional specialties like menestra de verduras are served with a 21st-century passion and flair that will delight even the most sophisticated gourmet. Guests enjoy indigenous ingredients and beloved specialties such as the nutty, buttery queso de Idiazabal, our croquetas prepared following a recipe over three generations old, and our acclaimed jamón Ibérico, a superb cured ham found only in Spain. For diners eager to get a delicious overview of Basque-Riojan cuisine, we recommend the “Menu Riscal.” Children’s menus are also available.

Start the day with the bountiful breakfast tasting menu—lingering over delicacies such as slow-cooked eggs, bread prepared daily by the village baker, a selection of local cold cuts, cheeses, and creamy goat-milk yoghurt, while soaking in the sweeping views of the countryside.

1860 Tradición welcomes hotel guests, visitors to the region, and a local clientele. Advance reservations for lunch and dinner are strongly recommended due to the reduced capacity of the dining room and terrace.
