Resort Chef, the Westin Cape Coral Resort

Chef Victoria Wenning joined The Westin Cape Coral Resort as a lead chef in 2018, bringing a wellness-driven, locally-inspired culinary approach to southwest Florida’s premier waterfront hotel. She is consistently recognized for her experiential and eye-catching menu items, which marry the Sunshine State’s bounty of fresh seafood with exceptional produce to create flavorful, craveable dishes.

Bringing more than a decade of seafood-focused culinary experience to The Westin Cape Coral Resort, Chef Victoria has been a driving force in the evolution of the hotel’s popular seafood offerings, in which guests are treated to local favorites expertly cooked up by The Westin Cape Coral Resort’s culinary team. To further personalize the food and beverage program, Chef Victoria led the launch of the resort’s new “Fridge Fill” program, which provides guests with customizable ready-made meals, ingredient baskets, and recipes that can be prepared from the luxury of the hotel’s in-suite kitchens.

At The Westin Cape Coral Resort, Chef Victoria is known for acquiring and developing new talent and transforming emerging cooks into rising stars. She embraces a creative mindset when it comes to menu development and encourages her team to think outside the box when dreaming up new dishes. Chef’s inspired, yet classically trained approach can be enjoyed firsthand in the custom menus she and her team create for the property’s two on-site restaurants and for the small and large groups that frequently visit the 308-room resort. In 2019, Chef Victoria was recognized by Marriott for her talent and leadership and was presented with the brand’s Manager of the Year award.

A New Jersey native who relocated to Florida in 2004, Chef Victoria is a graduate of The Culinary Institute of America. The oldest of six children, she developed an interest in cooking at an early age and could usually be found helping her parents prepare school lunches or family meals.

Prior to joining The Westin Cape Coral Resort, Chef Victoria served as executive chef of Red’s Fresh Seafood House and Tavern for three years, where she worked directly with local fishermen and farmers while honing her specialty in preparing local seafood. Additional career highlights include opening the popular Tun Tavern brewery and restaurant in Atlantic City, NJ, serving as a sous chef at The Renault Winery, developing a “Dock to Dish” program with local fishermen in Key West and receiving gold recognitions in the Jacob Javits Center Culinary Socialite Competition for Garme Mangé and sculptures.

In her current role, Chef Victoria strives to showcase the resort’s “Eat Well” by Westin menu items by introducing guests to new, unexpected flavors with vibrant plating presentations. From pickling vegetables to curing meats onsite, she’s also brought more of the culinary process in-house, localizing the dining experience even further. It’s Chef Victoria’s goal to continuously surprise and delight both new and returning guests with elevated, revolving menus that emphasize the best of Florida’s seasonal bounty.

Breakfast

Enjoy old favorites or find new ones with our variety of breakfast choices including energizing SuperFoodsRx™ like our orange-scented granola served with low-fat yogurt, alongside our own specialties like Pulled Pork Benedict with mojo roasted pork on an English muffin, poached egg, roasted breakfast potatoes and cilantro hollandaise sauce.

Lunch

Stop in midday and treat yourself to our top of the line lunch on the waterfront, including our Marker 92 Salad with fresh grouper or salmon and hearts of palm, jerk chicken breast with mango salsa and specialty wood-fired flatbreads.

Dinner

A favorite among hotel guests and Cape Coral locals, with starters such as sautéed shrimp with lemon with garlic, tomato and arugula. Main dishes include our plantain-crusted gulf grouper, grilled NY strip or the fresh catch of the day. Your meal isn’t complete until you choose from our triple chocolate cheesecake, key lime pie or house-made gelato.
