Rosas & Xocolate was designed for guests who take romance seriously. Located in the grand city of Mérida—where the famed Mayan civilization first discovered cocoa—the haute pueblo hotel, endowed with one of the region's most sought-after restaurants, is the social hub of the Yucatán's cultural capital. Throughout its 17 rooms, Rosas & Xocolate perfectly melds the rustic elegance of a historical baron's mansion with modern accoutrements and sensory delights. Winning the Iconos del Diseño award in 2011 for the best architectural restoration in Mexico, Rosas & Xocolate is a hybrid of old colonial architecture and contemporary charm. With two colonial mansions as a jumping-off point, architect Salvador Reyes Rios and Josefina Larrain managed to restore the timeworn structures, which feature high ceilings and a bevy of private terraces and balconies, and outfit them with cedar woods, cotton linens, and local materials such as handmade cement tiles and chucum stucco—all to luxurious effect.
