Giuseppe Gaglione's Passion

From the early age of 15, his passion for cooking stemmed from watching his father cook a dish of pasta and chickpeas. His constant research of new flavours and techniques led him to travel the world and meet professionals who trained his hands, mind and taste. He joined the Michelin starred brigade of the Capri Palace hotel and realised that there are only two types of cuisine: good and bad. The ‘Four Hands Dinner’ format, devised with Michelin starred chefs Nicola Fassaceca and Davide Caranchini, led him to shape a vision based on both tradition and innovation. In 2022 Chef Gaglione joined the Italian Association of ‘Ambasciatori del Gusto’, created to enhance the Made in Italy food and wine culture. His philosophy: ‘There is nothing I don’t like in the kitchen: I love to be inspired by the territory but my territory is the world.’ ‘Trying new flavours is a constant exercise that has to be measured with a Zen mindset: the patron is not a hostage but rather a potential accomplice.’

The Real Taste of the Pinsa Romana

The Pinsa Romana is a traditional soft bread dating back to ancient Roman times. Created by the farmers who lived in Rome’s countryside, Pinsa has recently come back into vogue thanks to its light and easy-to-digest dough: a mix of flours, salt and extra virgin olive oil with a delicious and gentle savor.

At Longitude 12 Bistrot & Jardin we take Pinsa very seriously, and our chefs express their creativity and expertise to deliver a one-of-a-kind dining experience to our guests: an exquisite dough made with high-quality flours topped with local, seasonal ingredients, from the classic ones to the most original ones.
