Sustainable Practices for Food-Waste Reduction

JW Marriott Hotel Bangkok is committed to reduce food-waste footprint by initiating a variety of sustainable practices in line with its global mission. The green operation targets to reach 50% reduction of food wastage by 2025. The practical operations have been implemented at JW Café and BBCO outlets by critically considering on proper food preparation and handling as well as shelf-life raw materials. Surplus foods are creatively reused for effective results. For instance, watermelon rinds are turned into watermelon candies and the trimmings of pineapple, mango and papaya are fermented to produce cleaning agents. Leftover breads are turned into croutons and fresh tomatoes from breakfast buffet line are later dried for salads. The oyster shells are also grounded into powder for chicken feed for the hotel’s partner farmers.

The menu offers a variety of fusion flavors, along with sushi, sashimi and roll favorites. Some traditional highlights include Wagyu Foie Gras Pepper Roll and Grilled Japanese Shizuoka eel on rice, while signature dish features include Wagyu Foie Gras pepper roll and Grilled miso marinated silver cod. Other menu items include the spicy tuna roll, Tsu dragon roll, and Homemade Yomogi mochi. Krispy Shirauo fish green salad are also on the menu.
