The cuisine of La Rioja combines the finest local ingredients with tradition, offering flavorful stews, meats, fish, and vegetables. Signature dishes include Caparrón, Patatas a la riojana, Huevos a la riojana, Chuletas de Cordero al sarmiento, Embuchado riojano, and Arrope. The region's rivers provide high-quality vegetables such as artichokes, cardoons, and borage, often served in flavorful vegetable medleys. Meats from livestock raised on the southern hills, such as Camerana beef and lamb chops cooked with vine shoots, are exceptional.
