The traditional gastronomy of Madrid is included within Spanish cuisine in general, and in particular Castilian gastronomy. Some of the most characteristic preparations are the cocido madrileño, Madrid-style tripe (callos a la madrileña), garlic soup, and desserts such as rosquillas tontas y listas, huesos de santo, the churros (prepared in the churrerías), the bocadillos de calamares, the patatas bravas, the chopitos, etc. The bars and restaurants give off this smell through the streets at almost any time of the day. According to some authors, Madrid is cuisine that is the result of the rush of bars and diners, of dishes prepared quickly and showing flavors to be accompanied with wines from the region. Many of the dishes that have the denomination "a la madrileña" originate in the bars and taverns of Madrid. The Restaurant, the Palace's Original Library

The palace's original library, entirely made of French oak, and in the Louis XV style, was modernized with warmer, dusty pink lighting, also very typical of the pre-revolutionary era. A more Anglo-Saxon furniture was designed for this space, since it was also typical of great French houses to have a space in the English Regency way. For this reason, the center of the space is occupied by a green velvet Back to Back sofa, and the chairs used for its new dining room character are a model of the famous Maison.

He is passionate about wine, which is one of the main pillars of his cuisine, especially natural wine. He is currently chef at Gresca restaurant in Barcelona.
