Cibolo Moon

Tequila Bar

Taste the authentic flavors of San Antonio at Cibolo Moon. Featuring the first tequila bar in Texas that is “T” certified by the Tequila Regulatory Commission, our restaurant has a trained bar staff who are experts in educating patrons on the intricacies of tequila.

Learn more about tequila at our acclaimed Cibolo Moon restaurant. Many people know little about tequila production, such as where the juice comes from and how it is extracted, fermented and bottled. Our bar staff enjoys changing customers' perceptions and helping them appreciate tequila.

It starts with the basics: Tequila is made from the juice of the blue agave; it has to be from the tequila designated origin, or DO, which includes areas in five states in Mexico, although 95 percent of tequilas come from Jalisco; and 51 percent of the liquor must come from blue agave. The best tequilas are 100 percent agave, which is stated on the bottles. Anything less means there are fillers.

After the blue agave is harvested, the leaves are cut off, and the piña is roasted for approximately 24 hours. Then, the juice is pressed out and either bottled immediately for blanco, fermented and aged in barrels for two to 12 months for reposado, or fermented and aged for one year or longer for añejo.

Cibolo Moon features over 100 tequila varieties behind the bar and showcases five different tequila infusions to create many different cocktails. The Strawberry Jalapeño is a must-try for anyone visiting the San Antonio Hill Country.

The Strawberry Jalapeño Margarita begins with our house tequila and fresh-cut strawberries and jalapeño infused for 72 hours. The jars are on display for patrons to see the process. After it has matured through the infusion process, house-made agave syrup and freshly-squeezed lime juice are added, and it is topped-off with strawberry wedges and a jalapeno wheel. It's a refreshing cocktail that starts with a sweet strawberry flavor and finishes with a jalapeño sensation.

The menu also includes many allocated and hard-to-find specialty tequilas like the Patron family: Piedra & Burdeos along with the Tears of Llorona. If you are new to the tequila scene, ask our knowledgeable bar staff about our many tequila flights to sample a few of the offerings.

Self-parking is complimentary. Valet parking can be validated at the restaurant. Cibolo Moon is located inside the main resort. From the main entrance, continue inside the lobby and down the staircase to the left.

Anejo

Anejo private room with sliding glass doors holds a max seating of 30 guests. The room includes a flat screen TV and a small patio area perfect for cocktail hour.

Reposado

Reposado is our semi private room with a max seating of 25 guests. This is an intimate space which has beautiful architectural curtains to provide privacy and also includes a flat screen TV.

Blanco

Blanco is our semi private room. This is room is identical to Reposado but has a max seating of 32 guests.

Rivertop Grill

Private Spaces at Crooked Branch

At the central bar at the resort, on the lower level, you’ll find Crooked Branch, our acclaimed San Antonio bar, offering guests specialty cocktails and whiskeys. Crooked Branch also boasts the Left Alcove and Billiards Room, two combinable private spaces. Each room features space and entertainment for 30 guests, for a combined total of a 60-guest maximum.

High Velocity

Never miss a play on our 120-foot-long high-definition video walls that make you feel like you're right in the middle of the action. Complete with personal TV screens, our Texas Hill Country sports bar is equipped to ensure you see every big game moment.

What ball park has two dozen beers on tap? A local brew like citrusy Firemans #4 from Blanco's Real Ale Brewing Company was made for washing down our Fish Tacos, with shredded cabbage and spicy chipotle ranch dressing. A crisp Alamo Golden Ale adds the perfect finish to the Green Chili Poblano, 100% Angus beef grilled with roasted poblano, topped with bacon, Chihuahua cheese, roasted poblano, lettuce, tomato and Jalapeno Mayo.

Thunder Heart Bison, Texas Hill Country

Grass-fed bison contains one of the highest known concentrations of omega 3 fatty acids. High in selenium, beta carotene, taurine, and the all-important CO-Q 10. The grass and field harvesting are the foundations of the nutritional profile that make Thunder Heart unique. Bison from this ranch is used in dishes throughout the resort. The ranch also supplies guajillo jelly to the resort.

 

Texas Olive Ranch, Dallas, Texas

Texas Olive Ranch 100% Pure Texas Extra Virgin Olive Oil is pressed from arbequina variety olives. The Arbequina variety was developed in Spain and is especially suitable for growing in the sandy loam soil of the Middle Rio Grande Valley in Texas, where the climate is very similar to southern Spain. The resort's restaurants and kitchens use this top grade olive oil.

 

Mozzarella Company, Dallas, Texas

A consistent American Cheese Society Award Winner, this handmade, fresh mozzarella is a staple in many of the resort’s dishes. The Mozzarella Company provides the resort with handmade mozzarella cheese that follows a centuries-old recipe.

 

Pure Luck Dairy, Dripping Springs, Texas

Pure Luck is a family farm and goat dairy made up of 100 Nubian and Alpine goats, raised on certified organic land on Barton Creek, in Dripping Springs, Texas. They specialize in handmade artisan goat cheese used throughout the restaurants and kitchens at the resort.

 

Veldhuizen Farm, Dublin, Texas

A small, family-run dairy and cheese maker, the Veldhuizen Farm supplies the resort with its unique Texas Gold Cheddar, a classic buttery cheddar, and Redneck Cheddar made with St. Arnold’s dark beer.

 

Lucky Layla, Plano, Texas

This third generation dairy produces high quality milk and artisan dairy products from award-winning Guernsey and Jersey cows. The all-natural, premium milk and butter from Lucky Layla, is served throughout the resort.

 

CKC Farm, Blanco, Texas

Produced just up the road from the resort on a small family farm, this handmade, fresh goat cheese is used in the resort restaurants.

 

Psencik Peaches; Fredricksburg, Texas

Sweet and juicy, Texas Hill Country peaches are a summer tradition. This small family orchard provides the resort with these ripe, sweet beauties, only available during June, July and August.

Diamond H Ranch - Bandera, Texas

Coturnix Quail are raised on an all-natural diet and neither antibiotics nor growth hormones are used. Relatively, the quail are provided with 5 times the space compared to free range chickens.
