Our History

Silvester's unique story is inspired by the rich history of this very space. In decades gone by, one of Sydney's finest butchers, the Silvester Brothers, served up local cuts from within these walls. Today, we honour their commitment to fresh food by sourcing quality ingredients brought to the table as dishes that capture our own style and flavours.

Today there are over twenty different beers to choose from - from boutique to international - rotating regularly. In addition to the extensive beer offering, Customs House Bar has an extensive wine, spirits, and cocktail menu.

Hosting Events

Cater for up to 350 people. For catering fewer than 60 people a platter menu is recommended; a barbecue is available for larger groups. A range of indoor and outdoor function spaces are available, including a tented area with electrical heaters. A mobile bar is available and cakes can be ordered for celebrations.
