Executive Chef Nuno Matos brings his skill and creativity to The Palace’s dining scene. A proponent of simple, refined cuisine, his culinary focus is on high quality, local and seasonal produce, eschewing complexity and serving dishes that are innovative and richly flavored.

Drawing on over 34 years of experience in developing mastery in Cantonese classic dishes, Chef Hung Chi‑Kwong’s executive background includes the Mandarin Oriental Hong Kong’s MICHELIN‑starred Cantonese Man Wah restaurant, as well as his role as Chef de Cuisine at Cuisine Cuisine at The Mira.

Chef Amine Ifakren creates a bold, authentic Mediterranean menu inspired by his heritage. Born in Oujda, with Moroccan-Algerian roots, he was introduced to cooking by his grandfather. He trained at Oujda's hotel school and refined his skills at the Institut Paul Bocuse in France.
