A native of Dublin, Ireland, Chef Gordon Maybury brings almost 30 years of experience, culinary knowledge, and innovation to Turnberry.  Chef Maybury oversees the resort's complete culinary program. He held positions in award-winning restaurants internationally from Arizona Biltmore, a Waldorf Astoria Resort, PGA Resort Palm Beach, the Loews Miami Beach Hotel, Peninsula Hotel New York and Michelin-starred restaurants in Ireland. Former host chef for the South Beach Wine & Food Festival Tribute Dinner, Chef Maybury has collaborated on two cookbooks and prepared “A Taste of Miami” menu at the prestigious James Beard House, earning rave reviews and accolades. He studied at the Dublin College of Catering and earned a Master Certificate in Essentials of Hospitality Management from Cornell University.

Boasting more than 17 years of culinary experience, Derrick Connor holds the position as Chef de Cuisine at CORSAIR Kitchen + Bar at JW Marriott Miami Turnberry Resort & Spa. Under the direction of Director of Culinary, Gordon Maybury, Connor brings new menu direction to the Modern American restaurant, serving up comfort food for the lighter palate at Corsair, which offers breakfast, lunch, dinner and weekend brunch. Connor - an Atlantic City native - further his culinary education and enrolled in the Academy of Culinary Arts in Mays Landing, NJ, graduating with Gold Medal Honors in 2009. Upon graduating, he was hired as Executive Chef for Los Mangos, a Latin fusion restaurant, where he implemented one of the first organic menu programs in the state of New Jersey. In 2011 he moved to South Florida to take on the role as Executive Chef for Delray Yacht Cruises, overseeing their culinary operations. In his next position at Market 17 in Fort Lauderdale he concurrently received two culinary certifications, one as certified Chef De Cuisine through the American Culinary Federation, and the other through the World Association of Chefs’ Societies.

Each private space serves as a stylish highlight to the restaurant's rustic, farmhouse cooking, cultivated from the freshest local ingredients. The décor and cuisine in our dining spaces work in harmony to create settings that evoke effortlessness and simplicity. Dine on the patio, overlooking the lush resort grounds, host an informal gathering in the lounge or a meal for up to 30 in the private dining room.

Chef Mina’s culinary vision led to founding his company, MINA Group, with partner Andre Agassi. He opened operations around the world, including the Michelin-starred MICHAEL MINA, a flagship restaurant in San Fran. Honored with numerous accolades, including James Beard Foundation “Who’s Who of Food & Beverage” inductee, Gayot Restaurateur of the Year, and more, Chef Mina continues to dazzle the culinary world. 

Executive Chef Fenton is the brilliant culinary mind leading BOURBON STEAK Miami. A former executive sous chef at Mina's restaurant, he has helped open seven of the chef's ventures. Fenton graduated from the Culinary Institute of America, honing his skills working for industry stars. Passion for fresh ingredients was cultivated by his parents, who always kept a garden of vegetables and herbs at their home in Princeton, N.J.

BOURBON STEAK invites guests to sample signature cuisine in a private venue, surrounded by striking mirrored glass walls overlooking the restaurant. Both options create a stylish, intimate space for up to 14 or 30 guests respectively. The Tasting Room is accented with high ceilings and a long, oak wood table, each space is complemented by a selection of over 850 wines to pair with premium cuts, and group dining menus.
