Investing in waste reduction programs and new, innovative alternatives to reduce, reuse and recycle waste has resulted in a monthly waste diversion rate of over 89%. Trash is hand separated to ensure all recyclables are pulled out. Other special items recycled include cooking grease and oil, batteries, lightbulbs, paints, and electronics. Recycled paper is used throughout the hotel. All utility usage and bills are reviewed by a 3rd party which helps flag possible energy waste and water leaks.

Marriott International and the San Francisco Marriott Marquis are committed to reducing our environmental impact through our industry-leading Serve 360 platform. Our goal is to cut landfill waste by 45% by 2025. As part of this initiative, we have eliminated plastic water bottles from our retail spaces and convention floors.
These efforts have not gone unnoticed. According to a recent article on SF.gov dated May 7, 2024, the San Francisco Marriott Marquis has been recognized as the City's Largest Green Business Award winner and the third largest in the state, certified by the California Green Business Network.

Sustaining Responsible Operations
As the world increasingly prioritizes eco-friendly, green initiatives, it’s important for us to partner with event professionals to work together to make sustainable meetings and events part of a combined strategy.
Here’s what we are proud of: Energy-efficient LED lighting in all spaces of the hotel. All guestroom and public restrooms have been retrofitted with city-approved water-saving showerheads, toilets, and faucets, and public restrooms sink faucets have hand motion activation to save water. Guestroom’s HVAC units are equipped with a centralized Inncom energy system that utilizes digital thermostats, door lock switches, and motion sensors to insure the best possible energy performance and HVAC motors have been replaced with energy-saving variable speed motors. We have installed light sensors for energy savings in offices and storage rooms. Main HVAC systems are all retrofitted with variable drive technology resulting in electric motor energy savings.

We have eliminated single-use water bottles, making our building entirely free of plastic bottles. This ambitious initiative showcases our dedication to environmental stewardship, and we hope sets a positive example for the hospitality industry, inspiring eco-conscious travelers from all over the world.
We take pride in championing environmentally friendly practices within our community, and we're excited to highlight our initiatives for greener meetings. To minimize waste, water stations are available in all meeting areas. In our kitchen, we actively compost all food waste, and surplus banquet food is donated when appropriate. Our online menus are customized, incorporating herbs grown on-site and locally sourced ingredients.
In an effort to reduce waste further, condiments are served in bulk, and traditional notepads and paper have been phased out from meeting rooms. We prioritize responsible waste management by hand-separating trash and recycling.
In support of energy conservation, half of our event tables are linen-free, and our hotel is continuously transitioning towards this sustainable practice. Our Air Handlers are equipped with economizers, utilizing outside air to cool spaces, while an automated HVAC efficiency system conserves energy during unoccupied meeting rooms.
Moreover, our event space adheres to California lighting code Title 24 standards and is outfitted with energy-efficient LEDs, motion sensors, and light level sensors. We are committed to creating a positive impact on both our community and the environment through these conscientious measures.

Sustainability in the kitchen is vital, and simple steps make all the difference. Even small changes make a difference as our prevention enables our kitchen to dramatically reduce food waste and operate a more sustainable facility. Our efforts include weighing food waste to empowering smart decisions on purchasing, production, and portioning.
B55 Craft House & Kitchen is proud to partner with Farmshelf, the world’s leading provider of sustainable indoor agriculture. Here at the San Francisco Marriott Marquis we are dedicated to environmentally conscious and sustainable business practices. Farmshelf allows us to produce pounds of fresh produce with 90% less water than traditional farming. Most importantly Farmshelf helps us guarantee that the produce we use in everything from our savory appetizers to our delicious cocktails is picked and served at the height of freshness.
Our culinary team sources sustainable, local, and regional products. Bulk food oil filtration operating system that allows us to reduce cardboard and plastic jug usage and reduces the amount of oil used. Additionally, we participate in redistributing the excess prepared food to join in the fight to end hunger and make a real cumulative impact daily by donating to Chefs to End Hunger.
