Executive Chef Daniele Turco displays a love of his Venice's culinary heritage in his award-winning dishes. A man of countless innovations and enormous vision, Chef Turco’s motto is: “To combine without ever covering up”. This means the singular flavors of the fish, meat or vegetables are presented with condiments and sauces surrounding them so guests can choose to merge them as they wish. Venetian cuisine reflects the cultural influence of those who over the centuries have passed through the city and left their mark on its food scene. And while Chef Turco's gastronomy is rooted to Venetian heritage, extensive travel and stints working abroad in locations as diverse as Malta, Sicily, Turkey and Morocco have led to him incorporating new gastronomic stimuli into his culinary repertoire. These days he continues his quest for gastronomic enlightenment while ensuring his cuisine offers a fresh interpretation of popular traditional dishes.

Separate menus for lunch and dinner ensure the Club del Doge's culinary experience is always a voyage of discovery. At lunch, which tends to be a more informal affair, guests are encouraged to share dishes, including the restaurant's signature risotto and fresh seafood platters. As the sun sets the lights are lowered and the atmosphere changes. The dinner menu elegantly weaves time-honored dishes with culinary innovations.

Since 1949 gastronomy has played an important role in the history of The Gritti Palace. Its culinary school, a legacy since 1975, is no exception. Now a refined version of its iconic self, The Gritti Epicurean School is a warm, country-style kitchen where guests may immerse themselves in Venetian culinary traditions, learn exceptional Venetian recipes, discover seasonal products from the Venetian lagoon and savour the culinary creations of Executive Chef Daniele Turco. The kitchen’s intimate atmosphere also lends itself perfectly for Chef’s Table-style dinners, wine or food tastings, and informal private dinners.

Start your evening with a refined apertif followed by live cooking by the chef. Bring exclusive recipes back home with The Gritti Epicurean School's special recipe book. Enjoy an exclusive epicurean experience in good company: friends and loved ones, an unexpected gathering for selected clients, or a team building with colleagues. The night begins with a welcome aperitif with the Chef and indigenous treats of Prosecco and cicchetti and it ends with a small token to all participants: our signature apron and the recipes of the culinary creations.

An insider's introduction to the art of Italian cooking, guided step-by-step by our Chefs through the preparation of a superb three-course menu of locally sourced and fresh seasonal ingredients, an essential part of Venetian Cuisine.
On Saturdays, indigenous classes focus on the making of fresh pasta. Master the art of combining flour, egg, yeast and water to create the perfect pasta dough, taking home with you a new skill to show off to friends and family, together with fun and treasured memories of your time in Venice.

Classes require a minimum of 2 participants but are also ideal for team building, spouse programs with a maximum attendance of 8 people.
A 72 hour advance reservation is kindly required.

An immersive experience that uncovers the Secret Venice of our Chefs.

The Gritti

Your day starts with a visit to the historic Rialto market, one of the oldest in Italy, where you are introduced to fresh local produce, its seasonality, and given tips for selecting the finest and freshest of these delectable ingredients.

Afterwards, at a traditional bacaro, indulge in a glass of prosecco and a tasting of typical cicchetti, delicious small bites of Venetian cuisine. 

Back at The Gritti Epicurean School, don your aprons for a fun culinary lesson with the Chef and begin to transform your ingredients into a seasonal 3-course menu.

On Tuesdays, half-day classes focus on vegetables and the creation of original and delicious dishes that respect the  garden cycle of Mother Nature.

Classes require a minimum of 2 participants but are also ideal for team building, spouse programs with a maximum attendance of 8 people.

A 72 hour advance reservation is kindly required.
